Electric Induction Cooking

Just when you thought there was nothing new under the sun when it comes to cooking, along comes induction technology for ranges and cooktops. It’s become more and more popular over the years, and it’s something to consider when you are in the market for a new stove.

What is induction, you ask? NASA may be able to explain the technology better than us appliance nerds, but in layman’s terms, it’s when the cooking surface uses magnetic fields to transfer heat directly to the bottom of magnetic cookware.

There are no burners or heating elements, which mean cook times are faster and cleaning is much easier. In fact, the response time is so quick for induction that you’ll notice a faster boil when comparing it to a gas range.

There is another advantage that induction aficionados really like--the surface of the glass doesn’t get hot under the pot. Contrary to popular belief, the surface does get warm to the touch, but it’s nothing like a traditional heating element that takes forever to heat up and cool down. Safety plays a big role with induction, too. If you have kids, there’s no need to worry about them accidently burning themselves should they put their hands on the cooking surface. Just keep your hands off the pot itself!

There’s a ton of flexibility for certain models. Because of the magnetic field, you can slide your pot or pan from one zone to the other, and it will instantly activate while shutting off the previous zone that was used. Also, some models give you the ability to “bridge” burners together if you are using a griddle. There are even models that feature pre-set temperatures levels and automatic adjustments.

One other thing to consider with induction is that you may need to purchase new cookware. Take a magnet and attach it to your current cookware. If it sticks, you’re good to go; if it doesn’t, you will need to buy new pots and pans. As far as price goes, induction is more expensive than electric radiant. However, the price point for induction models has been steady throughout the years, with very few price increases.
